B and I have pizza once a week. We love making it at home because it's so much cheaper and so much better. This week, we had left over chicken breasts from dinner earlier in the week, as well as some green onions. So, BBQ Chicken Pizza was created.
It's super simple. I just rolled out some pizza dough that I had in the freezer and used BBQ Sauce as a base. It's a nice change from tomato based pizza sauce. I like to sneak in veggies when I can, so I added corn to this pizza. It wasn't too bad. The corn added some sweetness to the pizza.
BBQ Chicken Pizza
Ingredients:

1/2 cup (or so) BBQ Sauce
1 cup of reduced fat Mozzeralla Cheese
1-2 cups grilled chicken breast, chopped and tossed in BBQ Sauce
1/2 of a small red onion; sliced thin
1 cup of corn
1 cup of reduced fat Mexican Taco Cheese Blend
3 green onions, chopped
Directions:
- Place pizza stone in oven; Pre-heat oven to 500 degrees F.
- Roll out pizza dough and place of parchment paper sprinkled with cornmeal.
- Spread thin layer of BBQ sauce on dough
- Sprinkle on chicken, mozzerella cheese, red onion, corn, taco cheese; and green onion.
- Place on pizza stone and bake for 10 minutes or until golden brown.
- Let cool; slice; and serve with crushed red pepper flakes, if desired.
