Brocolli Salad


My mom had been making this salad for years. I have seen all different versions of it, but basically they are all the same. All the recipes I've seen have featured a sweet and sour type dressing made from mayo, sugar, and vinegar. You can also vary the ingredients to what you have on hand. I've subbed fresh grapes for the craisins and thought it was delicious! Definitely plan on making this salad ahead of time to allow time for the flavors to blend.

Broccoli Salad

Ingredients
10 oz broccoli florets
1/2 small red onion - chopped fine
1/4 cup Craisins
1/4 cup Light Mayonnaise
1/4 cup sugar
2 Tbsp vinegar (I've used red, plain, and cider...all with good results)
1/4 cup dry-roasted salted sunflower seeds or slivered almonds
1/4 bell pepper(s), red bell pepper - diced
3 slices cooked crisp bacon, cooked crisp in microwave and chopped

Instructions:

Combine broccoli, bell pepper, bacon pieces, sunflower seeds and raisins. Stir together Mayo, Sugar, and vinegar until smooth. Toss with other ingredients. Refrigerate before serving.
