Patty Melts

I love a good Patty Melt! It's the only thing I order when we hit up the Waffle House when we're visiting Brian's family down South. These were easy to whip up, and I served with sweet potato fries.

Patty Melt

Ingredients:

2 T butter, softened

4 slices of rye bread

Salt and Pepper, to taste

1 pound ground beef, divided and shaped into 2 oval burgers

1 T Oi live Oil

1 small red onion, peeled and sliced into rings

2-3 slices of Swiss Cheese

Directions:

Melt butter over flat top griddle or cast-iron skillet and toast bread slices. Season and grill burgers. Cook to medium-rare. Put olive oil on griddle and grill onions until caramelized. Melt cheese slices over each burger. Assemble patty melts by placing cheeseburger over one slice of rye toast, top with caramelized onions and remaining bread slices. Serve with fries and fruit.
