Asian Pasta Salad

With temperatures at the century mark last week, we wanted simple meals. I have made this salad a number of times and it always turns out great. When I'm feeling really lazy, I pick up a bag of stir-fry mix at Trader Joes instead of preparing all the veggies separately. The mix has snow peas, shredded carrots, bok choy, celery and just a little broccoli. I typically cook the pasta and then put the veggies in right at the end of the cooking time for the pasta. When the minute is up, I drain everything together.

Asian Angel Hair Salad

Ingredients:
3 cups bok choy, chopped
1 cup snow peas
8 oz angel hair pasta, cooked
1 cup green onions, chopped
1 cup shredded carrots
2 cup chopped turkey or chicken
½ cup hoisin sauce
¼ cup rice vinegar
1 T ginger
1 T minced garlic
1 T sesame oil
4 tsp. sesame seeds

Directions:
Cook veggies in boiling water for 1 minute; rinse and drain. Combine sauce ingredients in large bowl. Add bok choy mixture, pasta, meat, and onions. Toss well.
