Pumpkin Spice Scones


Nothing says Fall to me like Pumpkin. I love all things Pumpkin! I have made pumpkin bread and muffins many times, so I wanted to try something different. I dug out this recipe I've had laying around for a while. I'm not even sure where I got the recipe from, but where ever it was...they know how to whip up a great pumpkin scone.

I changed up the original recipe I had just a bit. Instead of doing a wash and sprinkling sugar on the top of the scones, I decided to make them with a glaze on top. I was inspired by the look of Starbuck's pumpkin scones.

Pumpkin Spice Scones

Ingredients

2 cups all-purpose flour
2 tsp baking powder
1/2 tsp salt
1/2 tsp cinnamon
1/2 tsp nutmeg
1/4 tsp allspice
1/4 tsp ground ginger
1/2 cup pumpkin puree
3/4 cup heavy cream
3 Tbsp maple syrup
1 tsp vanilla

Directions

  1. Preheat oven to 425 degrees F, and line a baking sheet with parchment paper.

  2. In a medium bowl, whisk together the flours, baking powder, salt, and spices.
  3. In a liquid measuring cup, whisk together the heavy cream, pumpkin, syrup, and vanilla. Add it all at once to the dry ingredients and mix quickly with a fork until moistened. Knead it in the bowl several times to gather any dry crumbs into the dough.
  4. Turn dough out onto a lightly floured surface and pat it into a 1-inch thick disk. Cut into 8 wedges and place on a baking sheet (if you're freezing them, you can freeze them directly on the baking sheet, then transfer them when hard to a freezer bag.)

  5. Bake for 15-18 minutes (about 20 minutes if frozen).

  6. Let cool completely before glazing (recipe follows)


Powdered Sugar Glaze
Mix together until smooth. Use a brush to paint the glaze on the scones

1 cup powdered sugar
1 tablespoon powdered sugar
2 tablespoons whole milk


Spiced Glaze

Mix in a bowl until smooth:
1 cup powdered sugar
3 tablespoons powdered sugar
2 tablespoons whole milk
1/4 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
1 pinch ginger
1 pinch ground cloves

Drizzle on scones. I snipped off a small corner of a sandwich bag and loaded it with the glaze. This made it really easy to zig-zag the glaze. Let the scones sit for 1 hour to allow the glaze to harden.
